The Ocean > Tea For One

Glass: Coupe
Ice: No
Garnish: Star Anise Pod

Ingredients:
  • 1-1/2 oz Organic Ocean Vodka
  • 3/4 oz Chai Concentrate (unsweetened)*
  • 3/4 oz Bee Pollen Syrup*
  • 3/4 oz Lemon Juice
  • 1/2 oz Heavy Cream
Instructions:
  1. Add all ingredients to a mixing tin with ice. Shake!
  2. Strain into a coupe and garnish.

Chai Concentrate (unsweetened):

Ingredients:
  • 2 cups Water
  • 2 Black Tea Bags
  • 6 Cardamom Pods
  • 6 Black Peppercorns
  • 6 Cloves
  • 40g Fresh Ginger (chopped)
  • 2 Cinnamon Sticks
  • 3 Allspice
  • 1 Star Anise
  • 1/2 Vanilla Bean (sliced longways)
  • 1 dash Ground Nutmeg
Instructions:
  1. Bring all ingredients except tea bags together to a boil in a saucepan over medium-high heat.
  2. Reduce heat to medium-low, cover, and simmer for 15 minutes.
  3. Add tea bags and let steep for 5 minutes.
  4. Strain & Chill.

Bee Pollen Syrup:

Ingredients:
  • 1 cup Sugar
  • 1 cup Water
  • 12 grams Bee Pollen
Instructions:
  1. Add bee pollen to a pot over medium-high heat. Stir until lightly toasted and fragrant.
  2. Add water and stir until pollen is dissolved.
  3. Add sugar and stir until dissolved.
  4. Fine strain & bottle.

Whole Latte Love > Black Dog

Glass: Coupe
Ice: No
Garnish: Fresh Nutmeg, Pine Nuts

Ingredients:
  • 1-1/2 oz Plantation 3 Stars Rum
  • 2 oz Black Dog Espresso Blend
  • 3/4 oz Toasted Pine Nut Orgeat*
  • 1/2 oz Cream
Instructions:
  1. Add all ingredients to tin with ice. Shake!
  2. Strain into a coupe.

Toasted Pine Nut Orgeat:

Ingredients:
  • 1 cup Pine Nuts
  • Water
  • Sugar
  • 1/4 teaspoon Orange Flower Water
Instructions:
  1. Place the pine nuts in a food processor (or blender) with just enough water to cover them. Blend!
  2. Strain using a nut bag (or juicer).
  3. Measure the amount of liquid you are left with and add an equal amount of sugar. Shake or heat to dissolve.
  4. Add orange flower water and bottle.

Galliano's Pole > Poor Tom

Glass: Martini
Ice: No
Garnish: Dehydrated Lemon Wheel

Ingredients:
  • 1 oz Old Tom Gin
  • 1/2 oz Galliano L'Autentico
  • 1/2 oz Angostura Bitters
  • 3/4 oz Lemon Juice
  • 1/4 oz Grenadine*
  • 1/4 oz Cinnamon Syrup*
Instructions:
  1. Add all ingredients to a mixing tin with ice. Shake!
  2. Strain and garnish.

Grenadine:

Ingredients:
  • 1 cup Pomegranate Juice (unsweetened)
  • 1 cup Sugar
  • 1/4 teaspoon Orange Flower Water
  • Handful of Dried Hibiscus Flowers
Instructions:
  1. Add all ingredients to a sauce pan and bring to a simmer.
  2. Reduce liquid by 1/4.
  3. Cool, strain & bottle.

Cinnamon Syrup:

Ingredients:
  • 1 cup water
  • 1 cup Sugar
  • 2 Cinnamon Sticks, broken into pieces
Instructions:
  1. Place all ingredient in a pot and bring to a boil, stirring constantly.
  2. Remove from heat and allow to cool completely, at least 20 minutes.
  3. Strain & bottle.

The Battle of Tullamore > The Lemon Song

Glass: Rocks
Ice: Large Cube
Garnish: Dehydrated Lemon Wheel, Ancho Chili Powder

Ingredients:
  • 1 oz Tullamore Dew
  • 1 oz Ancho Reyes
  • 1 oz Lemon Juice
  • 1/2 Cinnamon Syrup*
  • 1 Egg White
Instructions:
  1. Add all ingredients to a mixing tin with ice. Shake!
  2. Strain into the glass, garnish, and sprinkle ancho chili powder.

Cinnamon Syrup:

Ingredients:
  • 1 cup water
  • 1 cup Sugar
  • 2 Cinnamon Sticks, broken into pieces
Instructions:
  1. Place all ingredient in a pot and bring to a boil, stirring constantly.
  2. Remove from heat and allow to cool completely, at least 20 minutes.
  3. Strain & bottle.

D'yer Mak'er > Tangerine

Glass: Highball
Ice: Crushed
Garnish: Mint Sprig, Straw

Ingredients:
  • 1-1/2 oz Appleton Jamaican Rum
  • 1/2 oz Wray & Nephew Overproof Jamaican Rum
  • 1/2 oz Tangerine Liqueur*
  • 1/2 oz Plantain Syrup*
  • 1/2 oz Pimentro Dram*
  • 3/4 oz Lime Juice
  • Angostura Bitters
Instructions:
  1. Fill a highball glass with crushed ice.
  2. Add all ingredients. Swizzle!
  3. Top with crushed ice & garnish with mint and Angostura Bitters.

Tangerine Liqueur:

Ingredients:
  • 1 bottle Brandy
  • Peels From 12 Tangerines, Pith Removed
  • 1 Cinnamon Stick
  • 1 Clove
  • 2 cups Sugar
Instructions:
  1. Spread tangerine peels evenly on a baking sheet and bake on your oven's lowest setting, until fully dehydrated. Or use your dehydrator, Mr. Fancy Pants Kitchen Appliance Guy.
  2. Place dried peels and brandy in a mason jar and wait 3 weeks.
  3. Add spices and wait 2 days.
  4. Add sugar.
  5. Strain and bottle.

Pimento Dram:

Ingredients:
  • 1 cup Aged Rum
  • 1/4 cup Whole Allspice Berries
  • 1 Cinnamon Stick
  • 1-1/2 cup Water
  • 2/3 cup Brown Sugar
Instructions:
  1. Crush the allspice berries in a mortar and pestle or grind them in a spice grinder. You want coarse, large pieces and not a fine grind.
  2. Place the crushed allspice in a mason jar and pour the rum on top. Seal the jar and shake well. Let this mixture steep for 4 days, shaking daily. On day 5, break up the cinnamon stick and add it to the mixture.
  3. After 12 days total steeping, strain out the solids through a fine-mesh strainer. Then strain again through a coffee filter into your final bottle or jar.
  4. Heat water and sugar, stirring constantly until dissolved.
  5. Add to your spiced rum and let rest for a week or so.

Spiced Plantain Syrup:

Ingredients:
  • 2 Ripe Plantains (peeled and sliced)
  • 2 cups water
  • Sugar
  • 2 cinnamon sticks
  • 2 star anise
Instructions:
  1. Combine all ingredients except sugar in a sauce pan and simmer for a bit.
  2. Strain out solids.
  3. Measure the remaining liquid and add an equal amount of sugar.

Moby Dickel > Candy Store Rock

Glass: Rocks
Ice: Large Cube
Garnish: Bourbon Cherry* & Orange Twist

Ingredients:
  • 1 bottle Dickel Rye Whiskey
  • 1 stick Rock Candy (4")
  • Zest from 4 Oranges
  • Zest from 1 Lemon
  • 1 Dried Persimmon
  • 1 stick Cinnamon
  • 1 Clove
  • 1 Star Anise
Instructions:
  1. Add whiskey, rock candy, and zests and wait 3 days.
  2. Add spices and persimmon wait 1-2 days.
  3. Strain and adjust sweetness and flavors as desired.

Bourbon Cherry:

Ingredients:
  • 3/4 cup Sugar
  • 3/4 cup Water
  • 1 cup Bourbon
  • 1 tablespoon Lemon Juice
  • 1 pound Dark Sweet Cherries, Pitted
Instructions:
  1. Add water, sugar and lemon to a sauce pan and bring to a boil.
  2. Reduce heat and simmer for 10 minutes.
  3. Remove from heat and add whiskey and cherries.
  4. Once cool, add to a mason jar & refrigerate for 4 weeks before using.

Ingredients:
  • Housemade Thyme Liqueur*
  • Lemon Juice
Instructions:
  1. Mix 1 part Thyme Liqueur with 1/2 part fresh lemon juice.

Thyme Liqueur:

Ingredients:
  • 1 bottle Vodka
  • 1 jar Dried Thyme
  • Simple Syrup
Instructions:
  1. Add a full spice jar of dried thyme to a bottle of vodka and let steep for 6 weeks, shaking occasionally.
  2. Fine strain and add simple syrup to taste.

Simple Syrup:

Ingredients:
  • 1 part Water
  • 1 part Sugar
Instructions:
  1. Combine water & sugar in a sauce pan.
  2. Heat & stir until dissolved, then chill.
